Key Lime Pie

Last night, our sweet friends, Jessa & Richard, had us over to their apartment for dinner. I think Rob and I may have met our match; these two practically inhale habañero and eat Mexican food every chance they get! They made us fresh-squeezed margaritas and tasty tacos. Such a treat! I brought a key lime pie that we enjoyed for dessert. Because it is so easy to make and delicious at the same time, I thought I’d share this recipe that comes straight from my mom.

Key Lime Pie
Graham cracker crust (easiest way is store-bought)
3 egg yolks, stirred
1 can sweetened condensed milk (can use fat free)
1/2 C key lime juice

Combine wet ingredients in order. Pour into crust. Bake at 350 degrees for 10 minutes. Let cool. Top with lime wedges. Refrigerate. Devour!
